- Pre-heat the oven to 180C 350F Gas mark 4.
- Combine the egg, peanut butter, oil, vanilla and honey.
- Next, stir in the carrots. Then sift the flour and bicarbonate into the mixture and fold it all.
- Prepare a tin and pour the mixture into it.
- Bake for 40 minutes and then allow the cake to cool completely which should take about 10 minutes.
- Spread the cream cheese evenly over the top of the cake.
